Nursing home in Chicago area that serves gluten free diet?

I am having a horrible time finding a nursing home to accomodate my father's food allergies. He's allergic to sugar, dairy and corn also. Some homes can prepare meals accordingly to these restrictions, but not the gluten free. Can anyone help? We are looking in Chicago, the south suburbs and the west suburbs. Please help.
